Perfect for those cold nights, this soup recipe is packed with protein and chock full of broccoli to create the perfect 1-2 superfood punch.
-1 Tbsp olive oil
-½ large onion
-1 large garlic clove, minced
-1 10-ounce packages of chopped frozen broccoli, thawed
-1 small potato, peeled and chopped
-2 cups chicken broth (or substitute vegetable broth)
-½ tsp nutmeg
-Salt and pepper to taste
-Handful of pumpkin seeds
-1-2 packets of Plant Power Protein
Sauté onion in garlic and olive oil. Mix in broccoli, potato and broth and bring to a boil. Reduce heat and simmer for 15 minutes or until vegetables are tender. Transfer to a blender and puree until smooth. Return to saucepan. Add Plant Power Protein and reheat for 2-3 minutes, stirring frequently. Season with nutmeg, salt, and pepper. Garnish with pumpkin seeds and fresh parsley.
