Tender Roasted Carrots


When roasting vegetables, sometimes simpler is better...Using just 3 ingredients, these roasted carrots make the perfect side dish for a weeknight dinner.


(Serving for two)

-4 carrots

-1 tablespoon olive oil

-2 scoops Golden Remedy


Position a rack in the center of the oven and preheat oven to 400 degrees F. Line a rimmed baking sheet with aluminum foil or parchment. 

Wash and peel carrots. If carrots are thick, cut in half crosswise to separate the thick end from the thin end; halve the thick end lengthwise. Cut all the carrot segments crosswise into 3-inch lengths (The carrots will shrink while cooking so make the slices big.)

In a medium bowl, toss the carrots with enough of the olive oil to coat generously. Add one scoop of Golden Remedy per adult serving and toss to coat using spoon, tongs, or spatula. 

Transfer to a sheet pan in 1 layer and roast in the oven for 20 minutes, until lightly browned and tender.

NOTE: Fresh Turmeric can stain countertops, cutting boards, cooking instruments, and skin. Handle with care. All -urpose cleaners, like Formula 409, can prevent a stain if used quickly.
