Zesty Mexican Bowl


Chock full of pure goodness, this Mexican bowl contains all the best ingredients from south of the border. It’s so good, you’ll wish you had a margarita to top it off.  


(4 Servings)

-1 cup rice (uncooked)

-1 cup diced sweet onion

-2 medium garlic cloves, minced

-1 tsp chili powder

-½ tsp garlic powder

-1 tsp cumin

-¼ tsp cayenne pepper (optional)

-½ tsp sea salt

-2 ½ Tbsp tomato paste

-1 15-ounce can of corn

-1 15-ounce can of black beans

-1 jalapeno, sliced

-1 tomato, chopped

-1 avocado, sliced

-Fresh cilantro

-1 lime, sliced

-1-2 packets of Plant Power Protein



Cook the rice. Sautee the chopped onion in garlic. Add the onion, tomato paste, all seasonings, and the Plant Power Protein to the rice. Divide rice among four bowls and top with suggested ingredients. Garnish with fresh cilantro and lime.
